Le célèbre fromage à pâte dure bénéficie d’une appellation d’origine contrôlée, de sorte que seuls Modène, Reggio Emilia, Parme, et quelques lieux de Mantoue et Bologne peuvent le produire.

We loved learning how you make the finest parmesan cheese in the world. The commitment of the cheese makers was evident. The process is amazing and you now know why really good parmesan cheese has a higher cost. Worth every penny. The tour guide was very knowledgeable and patient with our questions.

I have already written one review. I will write it again. The parmagiano regianno cheese factory tour was poor. The guide had little knowledge and If I didnt have my sound practical knowledge of hard cheese making I would have learned little or nothing from the tour. The guide was unable to answer basic technical questions eg fat content of combined skim and whole milk, I found myself translating the guides explanations into lay terms for other tour members. The cheese samples offered for tasting were miniscule in quantity and poor in quality. Certainly not an encouragement to purchase. Overall a poor and over priced experience.

Mateo is a superb guide--super-nice guy with in depth knowledge of and passion for his tour subjects. He picked us up at our hotel on time and dropped us at the train station as we requested--vert accommodating. Mateo shared information about Parma and the region non-stop--he welcomed our questions and he always provided very thorough answers that reflected relevant facts, local culture and government, and history. The parmigiano cheese producer we visited is really a local family farm 10km from Parma in an idyllic setting. The husband, wife and a couple of helpers run the entire operation that uses 1200 liters of milk daily to produce 10-15 Hoge cheeses. We got to see the entire process very first-hand. The tasting was very nice at the end. This tour remains one of our top experiences in our first 15 days in Italy this visit because it is a very interesting break from the never-ending feast of art and architecture. Highly recommended.

This tour was incredible! Matteo picked us up from our Airbnb in an air-conditioned van, drove us to the factory while giving us a mini-tour of the area along the way, and was very friendly and sweet. The factory was very interesting and all of the workers were so friendly and knowledgeable. There were only four of us on the tour with Matteo, so we were able to ask a ton of questions and everything felt very intimate and personalized. He was able to answer all of our questions in detail, and seemed to genuinely love his job. He had a smile on his face constantly, and was extremely passionate about the art of making parmesan cheese. At the end of the tour, we were able to taste four ages of parmesan cheese, along with different types of balsamic vinegar and Lambrusco wine. All in all, this was an amazing experience and I learned a lot including the fact that parmesan cheese is made using calf rennet, so it is unfortunately not a vegetarian product - thereby, I was unable to partake in the tasting!. Thank you Matteo and all of the factory workers for an incredible day in Parma!
